Bread Recipe - CoCo Wheats Bread or Muffins - Basic Recipe
3/4 cup CoCo Wheats
3/4 cup milk
1/2 cup oil
1 cup brown sugar
1 cup fruit or vegetable of choice*
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoons salt
1 tablespoon cocoa
1-1/2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 cup chopped nuts and/or 1/2 cup semisweet chocolate morsels.
*Fruit choices: Mashed, ripe banana or unsweetened applesauce.
*Vegetable choices: Peeled, shredded zucchini or fresh-cooked or canned pumpkin.
Preheat oven to 350°. Mix together in small bowl CoCo Wheats and milk; set aside for later. In large bowl, mix together next 4 ingredients. Sift together the rest of the dry ingredients. Add flour mixture and CoCo Wheats mixture to first mixture. Blend well. Stir in nuts and/or chocolate morsels.
Pour into greased 9-1/2" x 5" x 3" bread loaf pan or muffin tins.
Bake loaf about 1 hour; muffins 18 - 20 minutes (or until toothpick inserted in center of loaf or muffin comes out clean).
Let sit for 5 - 10 minutes and remove from pan(s). Cool completely. May be frozen for later use.
Makes 24 medium-size muffins.
TIP: For a smoother consistency, soak CoCo Wheats in cold water for 30-60 minutes. Drain. Add to Recipe.
