Ham Omelet Recipe - Baked Ham and Cheese Omelet
6 egg whites, warmed to room temperature
6 egg yolks
4 ounces sliced, cooked ham, cut in squares
1/3 cup milk
8 tablespoons Fryin' Magic, divided
2 teaspoons vegetable oil
2 tablespoons butter or margarine
1/4 teaspoon cream of tartar
2 ounces sliced mozzarella cheese, cut in squares
1. Beat egg whites and cream of tarter in a large bowl until stiff,-but-not-dry peaks are formed. Beat yolks in a small bowl until thick and lemon-colored. Add 6 tablespoons Fryin' Magic. Add milk gradually, beating until blended. Fold yolks into whites.
2. Heat a 10-inch skillet having a heat-resistant handle over low heat until hot. Add butter and oil and heat to sizzling. Spread egg mixture evenly in skillet and sprinkle with remaining 2 tablespoons Fryin' Magic. Cook 1 to 2 minutes over low heat.
3. Bake at 350° F. 10 to 15 minutes, or until light golden brown.
4. Remove from oven. Scatter ham and cheese squares over top. Set under broiler just until cheese begins to melt.
5. Cut into wedges to serve.
YIELD: 4 to 6 servings
