Chicken Recipe - Chicken Pot Pie
3 cups diced, cooked chicken
1 cup diced, cooked carrots
12 cooked tiny white onions
1 tablespoon snipped parsley
2 tablespoons butter or margarine
1/3 cup Fryin' Magic
1 cup milk
1 cup chicken broth
Crust:
1 cup flour
1/4 cup Fryin' Magic
1 teaspoon baking powder
3/4 cup mashed, cooked sweet potatoes or yams
1/3 cup shortening, melted
1 egg, beaten
1. Mix chicken, carrots, onions, and parsley; turn mixture into a 2-quart casserole.
2. Heat butter in a saucepan. Stir in Fryin' Magic. Add milk and broth gradually, stirring until smooth. Bring to boil, stirring constantly; boil 1 minute. Pour over chicken mixture in casserole.
3. For crust, mix flour, Fryin' Magic, and baking powder in a bowl. Mix mashed sweet potatoes, melted shortening, and beaten egg; add to dry mixture and stir until blended. Roll dough on a lightly floured surface into a round the size of casserole. Cut round into 6 wedges, cut out center with fancy cookie cutter, and place wedges on chicken mixture.
4. Bake at 350° F. 40 minutes, or until top is lightly browned and mixture is bubbly.
