Chicken Breast Recipe - Spicy Baked Chicken
1/2 pound (10 to 12) fresh mushrooms, cleaned
1/4 cup red wine vinegar
2 tablespoons water
1/4 cup Fryin' Magic
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1 clove garlic, crushed
2 tablespoons olive oil
3 pounds chicken pieces, rinsed
1/2 cup canned chicken broth
Finely snipped parsley
1. Put mushrooms into a bowl. Add vinegar and water, and let stand about 10 minutes. Drain.
2. Mix Fryin' Magic, coriander, cumin, garlic, and olive oil. Arrange chicken pieces and mushrooms in a single layer in a large baking pan. Spread mixture over chicken and mushrooms. Pour broth into pan.
3. Bake at 325°F for about 1 to 1-1/2 hours, or until chicken is tender. Sprinkle with parsley.
