Muffins Recipe - Crumb-Topped Date-Bran Muffins

  • Crumb Topping:
    1/4 cup Fryin' Magic
    1/4 cup sugar
    2 tablespoons flour
    2 tablespoons butter or margarine

    Muffins:
    2 tablespoons Fryin' Magic
    1/2 cup coarsely chopped walnuts
    1/2 cup sliced dates
    1-1/2 cups flour
    1/2 cup sugar
    1-1/2 tablespoons baking powder
    1-1/4 cups ready-to-eat crisp bran flakes
    2 eggs, slightly beaten
    1/2 cup butter or margarine, melted
    1/2 cup milk


    . For topping, mix Fryin' Magic, sugar, and flour in a bowl. Cut in butter with pastry blender or two knives until mixture resembles fine crumbs. Set aside.

    2. For muffins, mix Fryin' Magic with walnuts and dates to coat. Set aside.

    3. Combine flour, sugar, and baking powder in a bowl. Add bran flakes. Mix eggs, melted butter, and milk; add to flour mixture and stir just until dry ingredients are moistened. Mix in coated nuts and dates.

    4. Spoon into well-greased muffin pan, filling two-thirds full.

    5. Spoon topping over batter.

    6. Bake at 400°F 20 minutes, or until tops are golden brown and muffins test done.

    YIELD: about 1 dozen
