Coffee Cake Recipe - Quick Coffeecake
Topping:
1/4 cup sugar
1/4 cup Fryin' Magic
1 teaspoon cinnamon
1/3 cup chopped pecans
1 tablespoon butter or margarine, melted
Cake:
1 cup flour
1/2 cup sugar
1/4 cup Fryin' Magic
1-1/2 teaspoons baking powder
1/4 cup butter or margarine
1 egg, beaten
1/2 cup milk
1. For topping: mix sugar, Fryin' Magic, cinnamon, pecans, and melted butter. Set aside.
2. For cake: mix flour, sugar, Fryin' Magic, and baking powder in a bowl. Cut in butter with pastry blender or two knives until mixture resembles fine crumbs. Add beaten egg and milk. Stir with a fork until dry ingredients are moistened.
3. Turn batter into a greased 8-inch-round layer cake pan.
4. Bake at 375°F 25 to 30 minutes, or until cake tests done.
5. Cut into wedges and serve hot.
